Vodka Carrots

Ingredients

  • 6 to 8 carrots
  • 6 Tbsp. butter
  • 3 Tbsp. vodka
  • 1/2 onion, sliced
  • 1/2 tsp. cinnamon
  • 1/2 c. raisins (optional)
  • 2 Tbsp. brown sugar (optional)

Instructions

  1. Peel carrots and cut into strips.
  2. Melt butter over medium heat and saute carrots 2 to 3 minutes.
  3. Add onions and cinnamon. Stir 2 to 3 minutes more.
  4. Add vodka.
  5. Stir well.
  6. Cover and cook over low heat (simmer) for 20 to 30 minutes.
