Walnut Salad

Ingredients

  • 2 pkg. unflavored gelatin powder
  • 2 cups apple cider
  • 1/4 teaspoon salt
  • 2 cups apples, diced
  • 1/4 cup black walnuts, chopped
  • 1 tablespoon chopped parsley
  • lettuce leaves

Instructions

  1. Put 1/2 cup cold water into a small bowl.
  2. Sprinkle two envelopes of unflavored gelatin on water.
  3. Let stand 5 to 10 minutes to soften.
  4. Heat 2 cups apple cider until very hot; add 1/4 teaspoon salt.
  5. Remove from heat and immediately add softened gelatin.
  6. Stir until gelatin is completely dissolved.
  7. Have a 1-quart mold lightly greased with cooking oil, but do not use olive oil.
  8. Spoon about 1/2 cup of gelatin mixture into the mold and place in refrigerator.
  9. Chill remaining mixture until slightly thickened.
  10. Dice 2 cups apples and chop 1/4 cup black walnuts and 1 tablespoon chopped parsley.
  11. Add this to the gelatin and pour into the mold which already has a thin bottom layer of gelatin.
  12. Chill until set.
  13. Unmold onto a serving plate decorated with lettuce leaves.
