A creamy, crunchy ice cream dessert featuring lemon or pistachio pudding, crushed Ritz crackers, and vanilla ice cream, perfect for family gatherings or special occasions.

Ingredients

  • 2 pkg. instant pudding (lemon or pistachio)
  • 2 1/2 c. milk
  • 1 qt. vanilla ice cream (softened)
  • 60 Ritz crackers, crushed
  • 3/4 c. soft butter
  • 2 Tbsp. sugar

Instructions

  1. Mix pudding, milk, and softened vanilla ice cream until well combined and stiff.
  2. Mix crushed Ritz crackers, softened butter, and sugar until crumbly.
  3. Line a 13 x 9-inch pan with half of the cracker mixture as a crust.
  4. Save some cracker crumbs for topping.
  5. Pour the pudding mixture over the crust in the pan.
  6. Sprinkle the remaining cracker crumbs on top of the pudding layer.
  7. Refrigerate until the dessert is firm.
  8. Optional: Top with Cool Whip before serving.
