Watermelon (Spiced) Pickles

Ingredients

  • 1 1/2 qt. cubed watermelon rind
  • 3 Tbsp. salt
  • 3 qt. water
  • 8 c. granulated sugar
  • 2 c. vinegar
  • 2 Tbsp. whole cloves
  • 2 Tbsp. whole allspice
  • 6 sticks cinnamon

Instructions

  1. Use firm rind of watermelon.
  2. Trim off green skin and pink flesh and cut into 1-inch cubes.
  3. Soak the rind overnight in a mixture of 3 tablespoons salt and 1 quart water.
  4. Drain the rind.
  5. Cover with fresh water and cook until tender.
  6. Drain the cooked rind.
  7. Boil together the remaining 2 quarts water, sugar, vinegar, and spices (tied in cheesecloth if desired) for 5 minutes.
  8. Add the rind to the boiling mixture and cook until transparent, about 45 minutes to 1 hour.
  9. Remove the spices.
  10. Pack the hot pickles into sterile jars and seal immediately if storing long-term.
