Ingredients

  • 4 lb. neck bones, pork chops or pork roast
  • 1 tsp. salt
  • 4 oz. elbow macaroni
  • 4 potatoes
  • 16 oz. can baby English peas
  • 16 oz. can tomatoes
  • 1 small can whole corn
  • 2 c. meat broth
  • 3 tsp. hot sauce
  • 1/2 c. ketchup

Instructions

  1. Cook meat with 1 teaspoon salt until done. Cool and remove meat from the bones.
  2. Cook half of a 16-ounce box of elbow macaroni and the potatoes until tender.
  3. In a large pot, combine the cooked meat, macaroni, potatoes, peas, tomatoes, corn, and meat broth.
  4. Add hot sauce and ketchup to taste, and stir well.
  5. Add water if needed to reach desired consistency.
  6. Simmer and cook for about 15 minutes, stirring often.

Tips & Substitutions

For an extra depth of flavor, consider browning the meat before adding it to the pot. If you don’t have neck bones, pork chops or a pork roast can work well as substitutes. Feel free to add other vegetables like carrots or bell peppers for variation. Adjust the hot sauce according to your heat preference, and if you like a thicker stew, reduce the broth slightly.

Serving Suggestions

Serve Wendell's Brunswick Stew hot, garnished with fresh herbs or a dollop of sour cream for added creaminess. It pairs beautifully with crusty No-Fail French Bread for dipping. For a complete meal, consider serving it alongside a simple salad or some cornbread to round out the flavors.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stove over low heat, adding a splash of water or broth if it thickens too much. This stew also freezes well; portion it out and freeze for up to 3 months.
