Ingredients

  • 4 to 6 potatoes
  • olive oil
  • Mrs. Dash lemon pepper or seasoning to taste

Instructions

  1. Peel potatoes if desired and cut into 1-inch pieces.
  2. Place potato chunks into a bowl.
  3. Pour one tablespoon of olive oil over the potatoes.
  4. Stir to coat evenly.
  5. Sprinkle seasoning over the potatoes.
  6. Stir again to distribute the seasoning.
  7. Arrange the coated potatoes on a cookie sheet in a single layer.
  8. Bake in a 375°F (190°C) oven for 20 minutes.
  9. Turn the potato chunks.
  10. Bake for an additional 20 minutes if a crisper texture is desired.
  11. Serve similar to French fries, as a low-sodium, low-fat side or snack.
