Ingredients

  • 1 dishpan poke salad
  • 1 tsp salt
  • 1 cup cut onions (green, dry or wild)
  • 2 Tbsp bacon grease

Instructions

  1. Trim and wash the poke salad.
  2. Cook the poke salad in lots of water for 1 hour, then drain and wash again.
  3. Ensure the poke salad is tender.
  4. Add salt, cut onions, and bacon grease to a skillet.
  5. Simmer the mixture for 20 minutes with just enough water to prevent sticking.
