Ingredients

  • 1 lb dried lima beans
  • 1 large onion
  • 2 large stalks celery
  • 2 whole peppercorns
  • pinch of nutmeg
  • 1 or 2 ham hocks (3 1/2 to 4 lb)
  • 1 tsp salt
  • 2 large carrots

Instructions

  1. Place lima beans in a large bowl and wash them well.
  2. Cover the beans with water and let stand overnight.
  3. Save the soaking water for later use.
  4. Drain the beans and place them in a large pot.
  5. Pour half of the soaking water over the beans and cook over low heat for over 15 minutes with the pot covered.
  6. While the beans are cooking, dice the onion, celery, and carrots.
  7. Add the diced vegetables, whole peppercorns, salt, and nutmeg to the beans.
  8. Let the mixture simmer for another 15 minutes.
  9. Wash the ham hocks and add them to the beans.
  10. Simmer the stew for about 1 hour until the ham hocks are well done.
  11. If necessary, add the remaining soaking water to the stew.
  12. Ensure the dish is not overseasoned and serve hot.
