Ingredients

  • 2 egg whites
  • 1/2 tsp vanilla
  • 1 1/3 cups shredded coconut
  • dash of salt
  • 2/3 cup sugar

Instructions

  1. Beat egg whites with a dash of salt until soft peaks form. Gradually add sugar.
  2. Beat until stiff peaks form.
  3. Fold in shredded coconut and vanilla.
  4. Drop batter by rounded teaspoon onto a greased cookie sheet.
  5. Bake in a slow oven at 325°F for about 20 minutes.
