Ingredients

  • 2 (10 oz.) pkg. frozen mixed vegetables
  • 1 lb. fresh mushrooms, rinsed and sliced or 2 cans sliced mushrooms, drained
  • 1 c. bottled Italian dressing
  • 1/3 c. finely chopped parsley
  • 1/4 tsp. black pepper
  • crisp lettuce leaves

Instructions

  1. Cook vegetables according to label directions. Drain. Cool slightly. Toss with mushrooms in a large bowl.
  2. Sprinkle dressing, pepper and parsley over all.
  3. Toss lightly and refrigerate until ready to serve.
  4. May be served alone or in a lettuce lined bowl.
