Wilted Greens

Ingredients

  • 2 Tbsp. drippings
  • a little chopped onion
  • 1/4 c. vinegar
  • 1 qt. leaf lettuce or other greens, washed and cut
  • salt and pepper

Instructions

  1. Melt drippings in heavy pan; add a little chopped onion and cook until soft and yellow.
  2. Stir in vinegar, then add lettuce. Cover and heat a few minutes, until greens are wilted.
  3. Season with salt and pepper.
  4. Serve hot.
  5. Serves 4.
