Ingredients

  • 2 to 3 rabbits
  • 3 Tbsp. parsley
  • 3 tsp. rosemary, crushed
  • 2 tsp. sage
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 large onion, diced
  • 1 c. white wine

Instructions

  1. In small roasting pan, layer bottom with parsley, sage, rosemary, salt, pepper and onion.
  2. Rub rabbit in vegetable oil. Lay on top of seasonings.
  3. Repeat seasonings and onion on top of rabbit.
  4. Cover and bake at 300° for 2 hours.
  5. Add 1 cup white wine cover and cook for another hour.
