Ingredients

  • 3 lb. chicken breasts
  • 1 c. shoyu
  • 1 c. Mirin
  • 1 Tbsp. sugar
  • 18 small mushrooms
  • 18 green onions (2-inch size)

Instructions

  1. Cut chicken breasts into 1-inch cubes.
  2. Combine shoyu, Mirin, sugar, and chicken bones in a saucepan and bring to a boil.
  3. Simmer uncovered until the mixture is reduced by 1/4, then cool.
  4. Dip chicken cubes in the sauce.
  5. Thread chicken, mushrooms, and green onions onto skewers.
  6. Dip skewers in the sauce again and grill on a barbecue until cooked through.
