Yam Apple Hash

Ingredients

  • 1 lb. scrubbed, peeled yams
  • 1 1/2 c. water
  • 2 Tbsp. butter
  • 1 Tbsp. brown sugar
  • 1 lb. tart peeled apples, cored and cut in sixths
  • 1 Tbsp. lemon juice
  • pinch of ground nutmeg

Instructions

  1. Place yams in a medium saucepan with 1 1/2 cups of water. Cover and bring to a boil.
  2. Reduce heat and cook for 40 minutes until yams feel done.
  3. Drain yams and rinse out pan.
  4. Place apples in the pan with 3 tablespoons of water.
  5. Cover and cook for 3 minutes until barely done.
  6. Remove pan from heat and mash apples with a fork.
  7. Mash yams, butter and lemon juice.
  8. Add sugar and nutmeg.
  9. Stir in apple mixture.
  10. Mix well and serve.
