Yam, Apple, Nut Stuffing

Ingredients

  • 3 lb. yams or sweet potatoes
  • 1/4 c. butter or margarine
  • 1 lb. apples
  • 1/4 c. brown sugar
  • 1/2 to 1 c. walnuts, chopped
  • 1/4 c. water
  • 1/4 tsp. salt
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • grated peel of 1 orange or lemon

Instructions

  1. Bake potatoes until soft (in 450° oven), about 1 hour.
  2. Peel and mash.
  3. Add butter and mix well.
  4. Peel, core and thinly slice apples.
  5. In a saucepan, place apples, sugar and water and cook, covered, until tender.
