- Preheat the oven to 400°F (200°C).
- Add the grated cheese and mustard to the pie crust pastry before adding water, mixing well.
- Divide the pastry in half; roll out one half into a fairly thin rectangle.
- Place the rolled-out pastry on a baking tray and brush with beaten egg.
- Arrange the kipper fillets on top of the pastry.
- Roll out the second piece of pastry into a slightly larger rectangle.
- Place this over the fillets, pressing down on the edges to seal.
- Brush the top with beaten egg and sprinkle with grated cheese.
- Bake in the preheated oven for approximately 20 to 30 minutes until golden.
- Allow to cool, then trim off the edges and cut into neat, bite-sized strips.
- Serve on a plate garnished with parsley.
