Ingredients

  • 1/2 lb pie crust pastry
  • 1/4 lb strong Cheddar cheese
  • 1 pinch dried mustard powder
  • 1/4 tsp ready mixed mustard

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Add the grated cheese and mustard to the pie crust pastry before adding water, mixing well.
  3. Divide the pastry in half; roll out one half into a fairly thin rectangle.
  4. Place the rolled-out pastry on a baking tray and brush with beaten egg.
  5. Arrange the kipper fillets on top of the pastry.
  6. Roll out the second piece of pastry into a slightly larger rectangle.
  7. Place this over the fillets, pressing down on the edges to seal.
  8. Brush the top with beaten egg and sprinkle with grated cheese.
  9. Bake in the preheated oven for approximately 20 to 30 minutes until golden.
  10. Allow to cool, then trim off the edges and cut into neat, bite-sized strips.
  11. Serve on a plate garnished with parsley.
