Ingredients

  • 6 egg whites
  • 3/4 tsp. cream of tartar
  • 6 egg yolks
  • 1/2 c. cold water
  • 1 1/2 c. sugar
  • 1/2 tsp. vanilla
  • 1/4 tsp. almond extract
  • 1/2 tsp. lemon extract
  • 1 1/2 c. sifted cake flour
  • 1/4 tsp. salt

Instructions

  1. Beat egg whites in a small mixer bowl until foamy; add cream of tartar and beat until stiff peaks form.
  2. Beat egg yolks in a small bowl of electric mixer until thick and lemon colored.
  3. Add cold water and continue beating until thick.
  4. Transfer egg yolk mixture to a large mixer bowl.
  5. Gradually add sugar, beating until blended.
  6. Add vanilla, almond, and lemon extracts.
  7. Fold in sifted cake flour and salt.
  8. Gently fold beaten egg whites into the egg yolk mixture.
  9. Pour the batter into an ungreased 10-inch tube pan.
  10. Bake in a 325°F (160°C) oven for 1 hour, or until done.
  11. Invert the pan to cool.
  12. Frost with Creamy Yellow Frosting.
