Ingredients

  • 1 box yellow cake mix
  • 1 1/4 cups milk
  • 1/2 cup sugar
  • 2 tablespoons coconut juice or 1/4 teaspoon coconut extract
  • 1/2 cup coconut flakes

Instructions

  1. Bake the yellow cake mix as directed in a 9 x 13-inch pan.
  2. Allow the cake to cool for 15 minutes.
  3. Bring milk, sugar, coconut juice or extract, and 1/2 cup coconut to a boil.
  4. Use a utility fork to poke holes all over the cooled cake.
  5. Pour the hot coconut mixture evenly over the cake, allowing it to soak in.
  6. Let the cake cool completely then top with Cool Whip topping and 1/2 cup coconut flakes.
  7. Refrigerate until ready to serve.
