Ingredients

  • 3 gallons of clabber
  • 1 1/2 teaspoons of soda
  • 1/2 cup of fresh butter
  • 3 teaspoons of salt
  • 1 pint of heavy cream

Instructions

  1. Combine 3 gallons of clabber (or nonfat powdered milk) with 1 1/2 teaspoons of soda.
  2. Add 1/2 cup of fresh butter and 3 teaspoons of salt to the mixture.
  3. Pour in 1 pint of heavy cream and mix thoroughly.
  4. Allow the mixture to set and develop flavor, then process as desired for cheese consistency.
