Yellow Split Pea Spread or Dip

Ingredients

  • 1 cup Yellow Split Pea
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 1/2 teaspoons Turmeric
  • 1/2 teaspoons Garlic Powder
  • 1/2 teaspoons Ginger Powder
  • 1/2 teaspoons Paprika
  • 1 dash Splash Fresh Squeezed Lemon Juice
  • 1 teaspoon Olive Oil
  • 1 whole Small Carrot, Shredded
  • 1/2 sprigs Green Onion, Including Green Stem (Slice The Onion Down The Middle Lengthwise, Or Use The Entire Sprig For A More Pungent Taste), Or Chives

Instructions

  2. Cook split peas following package instructions.
  3. You want to overcook these a bit, since they will be pureed.
  4. Once the split peas are cooked, allow to completely cool off.
  5. Either in a blender or in a large bowl/container, add the cooked split peas and all of the spices, lemon juice, and olive oil.
  6. Mash or puree the ingredients, until it becomes a thick paste or puree.
  7. If the mixture is too dry add a couple of tablespoons of water, one at a time.

  9. To the puree, mix in the shredded carrot and sliced onion; combine well.
  10. Taste for salt and pepper, and adjust to your liking.
  11. Serve on sliced bread/toast or crackers.
  12. I served mine on whole grain bread that was covered in seeds and oatmeal and it was perfect!
  13. You could also use this spread to dip fresh vegetables instead of using fatty dressings.
  14. Store leftovers in the refrigerator , but use it up in the next day or two.
