Ingredients

  • 1 (11 oz.) can condensed cream of chicken soup
  • 1 1/2 c. shredded Cheddar cheese
  • 1 c. sour cream
  • 6 medium potatoes, sliced thin
  • salt and pepper to taste
  • 1/4 c. thin sliced onion (optional)

Instructions

  1. Combine cream of chicken soup and 1 cup of shredded Cheddar cheese in a saucepan. Heat over medium-low heat, stirring to prevent scorching.
  2. Add sour cream to the mixture and mix thoroughly.
  3. Place sliced potatoes in a casserole dish, layering them one at a time, and top with the cream mixture, using 1/3 of it over the three layers.
  4. Spread the remaining cream mixture on top of the layered potatoes.
