Ingredients

  • 3 peppers (red, yellow, or green), halved lengthwise
  • 1 medium tomato, diced
  • 1 Tbsp chopped cilantro
  • 2 cups cooked Minute rice
  • 1/4 lb Velveeta cheese spread
  • 1/4 cup celery slices

Instructions

  1. Preheat oven to 350°F.
  2. Remove seeds from peppers and cut in half lengthwise.
  3. Combine diced tomato, chopped cilantro, cooked rice, Velveeta cheese spread, and celery slices.
  4. Fill each pepper half with approximately 1/3 cup of rice mixture.
  5. Place stuffed peppers in a shallow baking dish.
  6. Cover the dish with foil or a lid.
  7. Bake for 30 to 35 minutes or until thoroughly heated.
