A vibrant, tangy salad combining fruity jellies, creamy cottage cheese, and pimentos, perfect for light gatherings or as a refreshing side dish with a zesty kick.

Ingredients

  • 1 pkg. lime jello
  • 1 pkg. lemon jello
  • 2 Tbsp. pimento, diced
  • 1 c. mayonnaise
  • 1 c. undrained cottage cheese
  • 1 c. crushed pineapple, partially drained
  • 1/2 to 1 1/2 tsp. dehydrated horseradish
  • 1 c. very hot water

Instructions

  1. Dissolve the lime and lemon jello in very hot water.
  2. Allow the mixture to cool slightly.
  3. Add diced pimento, mayonnaise, undrained cottage cheese, crushed pineapple, and dehydrated horseradish.
  4. Stir well to blend all ingredients together.
  5. Pour into a mold or dish and refrigerate until firm.
  6. Serve on a lettuce leaf with mayonnaise and paprika as a garnish.
