Ingredients

  • 4 c. grated zucchini (unpeeled)
  • 1 1/2 c. Bisquick
  • 1 c. grated cheese
  • 4 eggs, beaten
  • 1/2 c. oil
  • 1 c. chopped onion
  • salt and pepper to taste
  • 5 to 6 strips crispy bacon (crumbly)

Instructions

  1. Mix zucchini, cheese, eggs, oil, onion, bacon, salt and pepper, then mix in Bisquick.
  2. Bake at 350° in ungreased baking dish (2-quart) for 45 to 50 minutes or until done.
