- Grind or blend the onions and garlic.
- Add the blended onions and garlic to the ground meat.
- Add chili powder, Accent, oregano, salt, black pepper, and cumin to the meat mixture; then add 2 quarts of water.
- Cook and simmer the mixture for 1 hour.
- Add 2 more quarts of water and 4 tablespoons of shortening, then bring to a boil.
- Gradually stir in the yellow cornmeal to avoid lumps, until the mixture pulls away from the sides of the pot.
- Cool the mixture and roll into tamales.
- Tamales can be frozen for later use.
