Ingredients

  • 7 onions
  • 1 large garlic bulb
  • 4 qt. water
  • 5 to 6 lb. ground meat
  • 3 oz. chili powder
  • 2 oz. Accent
  • 2 Tbsp. oregano
  • 6 Tbsp. salt
  • 1 1/2 Tbsp. black pepper
  • 1 to 2 Tbsp. cumin
  • 2 1/2 to 3 lb. yellow cornmeal

Instructions

  1. Grind or blend the onions and garlic.
  2. Add the blended onions and garlic to the ground meat.
  3. Add chili powder, Accent, oregano, salt, black pepper, and cumin to the meat mixture; then add 2 quarts of water.
  4. Cook and simmer the mixture for 1 hour.
  5. Add 2 more quarts of water and 4 tablespoons of shortening, then bring to a boil.
  6. Gradually stir in the yellow cornmeal to avoid lumps, until the mixture pulls away from the sides of the pot.
  7. Cool the mixture and roll into tamales.
  8. Tamales can be frozen for later use.
