Ingredients

  • 1 1/2 cups dried mixed beans
  • ham hocks
  • 1 minced garlic clove
  • 1 chopped onion
  • 1 can tomatoes
  • salt to taste

Instructions

  1. Sort and rinse the dried beans; soak if desired for quicker cooking.
  2. In a large pot, add the dried beans, ham hocks, minced garlic, chopped onion, and canned tomatoes.
  3. Add enough water or broth to cover the ingredients completely.
  4. Bring to a boil over high heat, then reduce heat to low and simmer.
  5. Cook uncovered for approximately 2 hours, or until beans are tender and flavors meld.
  6. Season with salt to taste before serving.
