Ingredients

  • 5 eggs
  • 2 cups sugar
  • 4 tablespoons butter
  • 1/4 cup water
  • 1 (8 oz) can crushed pineapple, drained
  • 1 teaspoon vanilla

Instructions

  1. Carefully separate the eggs, placing the whites in a deep narrow bowl.
  2. Mix the flour with sugar.
  3. Cut up the butter and add to the sugar mixture along with the drained crushed pineapple and egg yolks.
  4. Stir while cooking over medium heat until the mixture reaches a thick stage.
  5. Remove from heat and add vanilla extract.
  6. Allow the pineapple filling to cool.
  7. Add 1 teaspoon of warm water to the egg whites.
  8. Beat the egg whites until stiff peaks form, gradually adding 5 teaspoons of sugar.
  9. Pour the prepared pineapple mixture into two cooked pie shells.
  10. Top with the beaten egg whites and bake until golden brown.
