3-Can Burritos
Ingredients
- 1 teaspoon olive oil ⓘ
- 1 onion, diced ⓘ
- 1 garlic clove, diced ⓘ
- 1 red chili, minced (with or without seeds) ⓘ
- 1 teaspoon cumin
- 1 red bell pepper, diced ⓘ
- 10 button mushrooms, sliced ⓘ
- 1 (400 g) can kidney beans, drained and rinsed ⓘ
- 1 (400 g) can refried beans ⓘ
- 1 (400 g) can diced tomatoes ⓘ
- tortilla, lettuce, tomatoes, avocado, sour cream, limes, to serve ⓘ
Instructions
- Heat the oil in a large saucepan and saute onion, garlic, chilli and cumin until fragrant and soft.
- Add bell pepper and mushrooms.
- Saute until soft.
- Add both types of beans and the tomatoes.
- Bring to the boil then reduce heat to low and simmer for 15-20 minutes.
- Serve with warm tortillas and other fillings at the table for people to wrap into burritos.
