Ingredients

  • white cake mix
  • 2 packages frozen coconut
  • 2 (8 oz.) sour cream
  • 2 cups sugar
  • 9 oz. whipped topping

Instructions

  1. Mix the cake according to the directions on the box and bake in 2 cake layers.
  2. Allow the cakes to cool completely.
  3. Split each cake layer into two layers, resulting in four layers total.
  4. Mix 2 packages of frozen coconut with the sour cream and sugar.
  5. Set aside 1/2 cup of this coconut mixture for later use.
  6. Spread the remaining coconut mixture between the cake layers.
  7. Mix the 1/2 cup of coconut mixture with the whipped topping.
  8. Spread this mixture on top and around the sides of the assembled cake.
  9. Refrigerate the cake in an airtight container for 3 days before serving.
