Ingredients

  • 3/4 cup chopped pitted dates
  • 6 tablespoons sugar
  • 6 tablespoons water
  • 1/4 cup chopped nuts
  • 2 teaspoons lemon juice
  • 2 cups sifted flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup butter or margarine
  • 1 1/4 cups brown sugar
  • 1 1/2 teaspoons orange zest
  • 1 egg
  • 1 tablespoon vinegar

Instructions

  1. Combine chopped dates, sugar, and water in a saucepan and cook until thick, about 5 minutes.
  2. Remove from heat and stir in chopped nuts and lemon juice; let cool.
  3. Prepare the cookie dough by creaming butter and brown sugar, then adding egg, orange zest, vinegar, flour, baking soda, and salt.
  4. Roll out the dough into a rectangle, spread the cooled date nut filling evenly over it.
  5. Roll the dough into a log, wrap in plastic wrap, and chill until firm.
  6. Slice into pinwheels and place on a baking sheet lined with parchment paper.
  7. Bake at 350°F (175°C) for about 10-12 minutes until golden.
