Ingredients

Instructions
- Combine chopped dates, sugar, and water in a saucepan and cook until thick, about 5 minutes.
- Remove from heat and stir in chopped nuts and lemon juice; let cool.
- Prepare the cookie dough by creaming butter and brown sugar, then adding egg, orange zest, vinegar, flour, baking soda, and salt.
- Roll out the dough into a rectangle, spread the cooled date nut filling evenly over it.
- Roll the dough into a log, wrap in plastic wrap, and chill until firm.
- Slice into pinwheels and place on a baking sheet lined with parchment paper.
- Bake at 350°F (175°C) for about 10-12 minutes until golden.
