Ingredients

  • 2/3 c. shortening or butter
  • 2/3 c. brown sugar
  • 2 eggs
  • 1/2 tsp. nutmeg
  • 2 tsp. cinnamon
  • 1 1/2 c. self-rising flour
  • 1 c. fruit juice (orange or pineapple)
  • 1/4 c. molasses
  • 1 c. seedless raisins
  • 1/2 c. pecans
  • 1 lb. candied fruit

Instructions

  1. Cream shortening,
  2. sugar and eggs; mix well.
  3. Add flour (sifted),
  4. nutmeg and cinnamon alternately with juice, beating well after each addition. Dredging fruit and nuts in the 1/2 cup flour,
  5. fold
  6. in
  7. fruit,
  8. nuts
  9. and
  10. molasses.
  11. Pour
  12. into 10-inch tube
  13. pan
  14. that has been greased and floured.
  15. Bake in 275° oven 2 to
  16. 3
  17. hours with pan of water on bottom rack for moisture.
