5 Star Fries

Ingredients

  • 2 12 lbs russet potatoes (the longer the better)
  • 2 -3 quarts canola oil
  • kosher salt, to taste

Instructions

  1. Slice washed, unpeeled potatoes lengthwise into 1/4-inch-thick planks, then into 1/4-inch sticks.
  2. Soak fries in very hot tap water for 1 hour.
  3. Pat dry and set aside.
  4. Pour oil into a large, heavy pot, filling no more than halfway.
  5. Heat over medium-heat just until oil reaches 325 degrees (you can use a candy thermometer.)
  6. Carefully drop the fries into oil and turn burner to high.
  7. Cook for about 8 minutes, until barely golden.
  8. Transfer fries to a paper-lined baking sheet and let rest for 10 minutes, or up to 2 hours.
  9. Reheat oil over medium-heat to 350 degrees.
  10. Return half the fries to oil and cook until crisp, 1 to 2 minutes.
  11. Transfer to paper-lined bowl and sprinkle generously with salt.
  12. Repeat with remaining fries.
  13. Serve immediately.
