5 Star Fries

- Slice washed, unpeeled potatoes lengthwise into 1/4-inch-thick planks, then into 1/4-inch sticks.
- Soak fries in very hot tap water for 1 hour.
- Pat dry and set aside.
- Pour oil into a large, heavy pot, filling no more than halfway.
- Heat over medium-heat just until oil reaches 325 degrees (you can use a candy thermometer.)
- Carefully drop the fries into oil and turn burner to high.
- Cook for about 8 minutes, until barely golden.
- Transfer fries to a paper-lined baking sheet and let rest for 10 minutes, or up to 2 hours.
- Reheat oil over medium-heat to 350 degrees.
- Return half the fries to oil and cook until crisp, 1 to 2 minutes.
- Transfer to paper-lined bowl and sprinkle generously with salt.
- Repeat with remaining fries.
- Serve immediately.
