Ingredients

  • 2 c. self-rising cornmeal
  • 1 c. self-rising flour
  • 2 c. milk
  • 1 egg
  • 3 Tbsp. vegetable oil
  • 1 Tbsp. sugar

Instructions

  1. Spray a large muffin pan with vegetable oil spray (butter flavored).
  2. Mix self-rising cornmeal, self-rising flour, milk, egg, vegetable oil, and sugar (if using) together well in a large bowl.
  3. Fill muffin pan cups 1/2 to 2/3 full of batter.
  4. Bake in a preheated 450°F oven until golden brown.
