Easy Corn Casserole

A creamy, cheesy corn casserole with a hint of heat from jalapenos, perfect as a comforting side dish for family dinners or gatherings.

Ingredients

  • 2 (11 oz) white shoepeg corn
  • 8 oz cream cheese
  • 3-4 Tbsp butter
  • 1/2 cup milk
  • 1/2 cup bread crumbs
  • 1/2 finely chopped jalapeno pepper

Instructions

  1. Melt cream cheese and milk together over medium heat.
  2. Drain the corn and add it to the cream cheese mixture.
  3. Add chopped jalapeno peppers if desired.
  4. Pour the mixture into a 2-quart casserole dish and sprinkle with bread crumbs.
  5. Slice butter into pats and place over the top.
  6. Bake at 400°F for approximately 15 minutes until bubbly and golden.
