Ingredients

  • 10 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 (16 oz) carton cottage cheese
  • 1 pound Monterey Jack cheese, shredded
  • 1 stick butter or margarine, melted
  • 2 (4 oz each) cans chopped green chilies

Instructions

  1. Preheat oven to 350°F.
  2. Beat eggs until light and lemon colored.
  3. Add flour, baking powder, salt, cottage cheese, shredded Monterey Jack cheese, and melted butter.
  4. Blend until smooth.
  5. Stir in chopped green chilies.
  6. Pour mixture into a well-buttered 9 x 13-inch baking pan.
  7. Bake for about 35 minutes or until the top is browned and the center appears firm.
  8. Serve immediately.
