Abgusht(Bean Soup)

Instructions
- Rinse the beans and set them out the night before to soak.
- Place the soaked beans in a stew pot.
- Wash the potato and put it in the stew pot whole with the peel.
- Slice the onion and add it along with the stew meat or lamb shank to the pot.
- Add the tomato sauce and enough water to fill the pan halfway.
- Add salt to taste.
- Slow cook for 2 to 3 hours until the meat is tender.
- Remove any bones from the meat.
- Peel the potato after cooking.
- Drain the broth from the pot.
- Mash all the cooked ingredients together.
- Serve the mash with chips or bread.
