Abgusht is a hearty bean soup with tender meat, potatoes, and rich tomato flavors, perfect for comforting meals and suitable for family gatherings or cold days.

Ingredients

  • 1 cup dried kidney or pinto beans
  • 1 small potato
  • 1 medium onion
  • 1/2 package stew meat of lamb shank
  • 4 oz tomato sauce

Instructions

  1. Rinse the beans and set them out the night before to soak.
  2. Place the soaked beans in a stew pot.
  3. Wash the potato and put it in the stew pot whole with the peel.
  4. Slice the onion and add it along with the stew meat or lamb shank to the pot.
  5. Add the tomato sauce and enough water to fill the pan halfway.
  6. Add salt to taste.
  7. Slow cook for 2 to 3 hours until the meat is tender.
  8. Remove any bones from the meat.
  9. Peel the potato after cooking.
  10. Drain the broth from the pot.
  11. Mash all the cooked ingredients together.
  12. Serve the mash with chips or bread.
