Deer Or Beef Salami

A savory homemade salami made from deer or beef, infused with spices and curing salt, perfect for charcuterie boards or snacks for meat lovers.

Ingredients

  • 2 lb. ground deer or ground beef
  • 1/4 tsp. pepper
  • 1/4 tsp. onion salt
  • 1 Tbsp. celery salt
  • 3/4 c. water
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1 Tbsp. mustard seed
  • 2 Tbsp. curing salt

Instructions

  1. Mix all ingredients together and roll into sausage shape.
  2. Wrap the sausage in foil and prick the foil with a fork.
  3. Refrigerate for 24 hours.
  4. Bake on the rack of a broiler pan in the oven at 350°F for 1 hour.
  5. Allow to cool.
  6. Wrap in new foil and refrigerate for 24 hours before eating.
