Acapulco Delight
A flavorful layered Mexican casserole featuring seasoned ground beef, cheesy toppings, refried beans, and fresh vegetables, perfect for family dinners and gatherings.

Instructions
- Brown the ground beef and drain excess fat.
- Stir in taco seasoning mix and add water according to package directions.
- Simmer the beef mixture for 5 minutes.
- Preheat oven to 350°F (175°C). Grease a 9 x 13-inch baking dish.
- Place 2 tortillas in the bottom of the prepared dish.
- Spread half of the meat mixture over the tortillas and sprinkle with 1/2 cup of Cheddar cheese.
- Add 2 more tortillas on top.
- Spread refried beans over the tortillas.
- Cover with 1 1/2 cups of sour cream.
- Place the remaining 2 tortillas over the mixture.
- Top with the remaining meat mixture and sprinkle with remaining Cheddar cheese.
- Finish by topping with cubed Monterey Jack cheese.
- Bake in the preheated oven for 20 to 30 minutes until bubbly and golden.
- Remove from oven and top with chopped lettuce, chopped tomatoes, and 1/2 cup sour cream.
