Ingredients

  • 2 lb ground beef
  • 1 package taco seasoning mix
  • 6 tortilla shells
  • 2 cups grated Cheddar cheese
  • 17 oz refried beans
  • 1 1/2 cups sour cream
  • 1/2 cup Monterey Jack cheese, cubed
  • 1 cup chopped lettuce
  • 1 cup chopped tomatoes

Instructions

  1. Brown the ground beef and drain excess fat.
  2. Stir in taco seasoning mix and add water according to package directions.
  3. Simmer the beef mixture for 5 minutes.
  4. Preheat oven to 350°F (175°C). Grease a 9 x 13-inch baking dish.
  5. Place 2 tortillas in the bottom of the prepared dish.
  6. Spread half of the meat mixture over the tortillas and sprinkle with 1/2 cup of Cheddar cheese.
  7. Add 2 more tortillas on top.
  8. Spread refried beans over the tortillas.
  9. Cover with 1 1/2 cups of sour cream.
  10. Place the remaining 2 tortillas over the mixture.
  11. Top with the remaining meat mixture and sprinkle with remaining Cheddar cheese.
  12. Finish by topping with cubed Monterey Jack cheese.
  13. Bake in the preheated oven for 20 to 30 minutes until bubbly and golden.
  14. Remove from oven and top with chopped lettuce, chopped tomatoes, and 1/2 cup sour cream.
