Ingredients

  • 3 cloves garlic, crushed
  • 2 egg yolks, gently boiled
  • coarse/sea salt to taste
  • 1 tsp. Dijon mustard
  • 1 1/4 cups olive oil, at room temperature
  • 2 Tbsp. lemon juice

Instructions

  1. Using a marble mortar and pestle or blender, crush the garlic cloves to a paste.
  2. Add the boiled egg yolks and salt; work in the Dijon mustard to combine.
