Ingredients

  • 1 1/2 cups rice
  • 1 teaspoon salt
  • 1 tablespoon margarine
  • 1 cup sugar
  • 2 cups milk
  • 1/2 cup raisins
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Bring rice, salt, margarine, and water to a boil in a small saucepan.
  2. Cook until rice is tender.
  3. Drain the rice.
  4. Do not rinse. Add sugar, beaten eggs, vanilla extract, and raisins.
  5. Mix well to combine.
  6. Bring milk and Jell-O mix to a boil over medium heat.
  7. Stir the hot milk mixture into the rice mixture.
  8. Bake in the oven until the top shakes like custard.
  9. Remove from oven and let cool for about 15 minutes.
  10. Cover with clear wrap and let set for about 30 minutes.
  11. Serve warm.
