Ingredients

  • 2 c. self-rising flour
  • 2 Tbsp. sugar
  • 1 large egg
  • 1 1/2 to 2 c. milk
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1 Tbsp. butter or margarine, melted
  • 1/2 tsp. vanilla extract

Instructions

  1. Combine self-rising flour and sugar in a large bowl.
  2. Make a well in the center of the mixture.
  3. In a small bowl, combine the egg, milk, softened cream cheese, melted butter, and vanilla extract, stirring well.
  4. Add the wet ingredients to the dry ingredients, stirring just until moistened.
  5. Pour 1/4 cup of batter onto a hot, lightly greased griddle for each pancake.
  6. Cook pancakes until tops are covered with bubbles and edges appear cooked.
  7. Turn and cook the other side until golden brown.
  8. Serve pancakes warm with maple syrup and, if desired, bacon.
