  8. Cut rounds with a lightly floured 1 3/4-inch round cookie cutter.
  9. Using a lightly floured 3/4-inch round cookie cutter, cut out centers of the cookies.
  10. Brush cookies lightly with a slightly beaten egg yolk.
  11. Sprinkle cookies with the chopped almonds.
  12. Carefully transfer cookies to the cookie sheets.
  13. Bake at 350°F for 10 to 15 minutes.
  14. With a spatula, carefully remove cookies to a cooling rack.
  15. Repeat the process with remaining dough.
