Ingredients

  • 1 cup margarine
  • 2 cups sugar
  • 2/3 cup sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup persimmon pulp
  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder

Instructions

  1. Cream margarine, 2 cups of sugar, and salt until well combined.
  2. Add egg and persimmon pulp; mix thoroughly.
  3. Stir in flour, baking soda, and baking powder until dough is smooth.
  4. Chill the dough overnight for easier handling.
  5. Preheat oven to 350°F (175°C).
  6. Mix remaining 2/3 cup sugar with cinnamon in a shallow dish.
  7. Drop spoonfuls of dough onto baking sheet, then roll in the cinnamon-sugar mixture.
  8. Bake for about 10-12 minutes or until edges are golden.
