Ingredients

  • 1/2 lb. unsalted butter
  • 4 eggs
  • 1/2 cup sugar
  • 1/2 lb. semi-sweet chocolate, chopped
  • 4 egg yolks
  • 7 Tbsp. all-purpose flour

Instructions

  1. Butter and flour 5 to 6-ounce ovenproof custard cups or ramekins.
  2. Melt chocolate and butter over hot water in a double boiler; cool slightly.
  3. Beat eggs, egg yolks, and sugar with an electric mixer on medium-high until pale yellow, about 10 minutes.
  4. Reduce mixer speed and add flour gradually.
  5. Add melted chocolate mixture and beat until glossy, about 5 minutes.
  6. Pour the mixture evenly into the prepared cups.
  7. Bake at 325°F (160°C) for 12 minutes or until set around edges but centers still move slightly.
  8. While still warm, turn out of custard cups upside down onto plates or serve in ramekins.
  9. Dust with confectioners' sugar and serve immediately over vanilla custard sauce.
