Ancini Fruit Salad

Ingredients

  • 1/2 pkg. ancini macaroni
  • 1 large can pineapple tidbits
  • 1 can mandarin oranges
  • 1 jar maraschino cherries
  • 1 cup sugar
  • 1.5 cups fruit juices
  • dash salt
  • 2 Tbsp. flour
  • 2 beaten eggs
  • 2 Tbsp. lemon juice

Instructions

  1. Mix the cooked ancini macaroni, drained pineapple tidbits, drained mandarin oranges, and drained maraschino cherries together.
  2. In a saucepan, mix and boil the sugar, fruit juices, salt, and flour for 3 minutes, stirring constantly.
  3. Add a small amount of the hot mixture to the 2 beaten eggs to temper them.
  4. Return the egg mixture to the hot mixture and boil an additional 2 minutes.
  5. Add lemon juice to the mixture and cool.
  6. Pour the cooled mixture over the fruit and macaroni mixture.
  7. Chill thoroughly before serving.
  8. Before serving, fold in Cool Whip.
