Ingredients

  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1 heaping teaspoon baking powder
  • 2 cups milk
  • 1 or 2 eggs
  • 1 cup boiling water
  • 1 tablespoon melted butter
  • 1 tablespoon melted lard

Instructions

  1. Mix cornmeal, salt, and baking powder in a bowl.
  2. Add beaten eggs, sweet milk, and enough boiling water to make a very thin batter. Stir in melted butter and lard.
  3. Pour the batter into a well-greased baking dish.
  4. Bake in a moderate oven at 375°F for 30 to 40 minutes until golden and cooked through.
