Ingredients

  • 3 cups plain sifted flour
  • 1 teaspoon salt
  • 3 teaspoons sugar
  • 1/2 teaspoon baking soda
  • 3 teaspoons baking powder
  • 3/4 cup shortening
  • 3/4 cup strained grapefruit juice

Instructions

  1. Sift the flour, salt, sugar, baking soda, and baking powder together in a bowl.
  2. Cut or rub in the shortening until the mixture is well blended.
  3. Mix the strained grapefruit juice with milk.
  4. Add the liquid mixture to the dry ingredients, adding just enough to make a soft, non-sticky dough.
  5. Turn the dough onto a lightly floured board.
  6. Knead a few strokes to combine.
  7. Pat the dough to a thickness of 1/8 inch.
  8. Cut into small biscuits.
  9. Preheat the oven to 475°F (246°C).
  10. Bake the biscuits for 15 minutes until golden brown.
  11. Serve warm with butter and orange marmalade.
