Ingredients

  • 1 cup cooked rice
  • 4 tablespoons raisins
  • 2 eggs
  • 2 cups milk
  • 2 packets diet sugar
  • 1/2 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon

Instructions

  1. Set out 4 custard cups.
  2. Place 1/4 cup cooked rice in each dish.
  3. Add 1 tablespoon raisins, 1/4 beaten egg, 1/2 cup milk, and 1/2 packet diet sugar to each cup.
  4. Sprinkle vanilla, lemon juice, nutmeg, and cinnamon in each cup.
  5. Stir to combine ingredients in each cup.
  6. Bake in the oven at 350°F (175°C) for 40 to 45 minutes.
