- Lightly flour a work surface.
- Roll out half of the puff pastry dough to a 14-inch square about 1/8-inch thick.
- Use a 6-inch pan lid as a guide to cut out 4 rounds with a small knife.
- Sprinkle water on 2 baking sheets.
- Place the pastry rounds on one sheet and press down slightly.
- Prick each round with a fork in several places, avoiding the edges.
- Chill the rounds for 15 minutes.
- Divide the almond paste into 3 portions and roll each into a ball.
- Cover a sheet of parchment paper with a second sheet of paper.
- Set one almond paste ball on the paper and roll into a 5-inch round.
- Place the almond paste round on top of a pastry dough round, leaving a 1/2-inch border.
- Repeat with remaining almond paste portions.
- Refrigerate until ready to bake.
- Cut the lemon in half and squeeze the juice from one half into a small bowl.
- Peel, halve, and core the apples.
- Rub the apples with the remaining lemon half to prevent browning and brush with lemon juice.
- Preheat the oven to 425°F.
- Arrange apple slices, overlapping slightly, in a ring on the almond paste rounds, covering them completely.
- Bake until the pastry edges have risen, are light and golden, about 15 to 20 minutes.
- Sprinkle the apples evenly with sugar.
- Return to the oven and continue baking until apples are golden brown, caramelized, and just tender, an additional 5 to 10 minutes.
- Serve immediately.
