Apple And Pear Cake
Ingredients
- 1/2 cup self-raising flour, sifted ⓘ
- 3/4 cup sugar ⓘ
- 3/4 cup cream ⓘ
- 2 None medium eggs, lightly beaten ⓘ
- 1 tsp vanilla extract ⓘ
- 1 None pear, peeled, cored, chopped ⓘ
- 1 None apple, peeled, cored, chopped ⓘ
- 1 1/4 cups chopped mixed nuts (pecans, macadamias, almonds) ⓘ
- None None powdered sugar, custard, to serve ⓘ
Instructions
- Preheat the oven to 350°F. Lightly grease and flour a 9 inch springform pan. Line base and sides with baking paper.
- Combine flour and sugar in a large bowl. Lightly fold cream, eggs and vanilla into dry ingredients with a wooden spoon until combined. Stir fruit through and pour into prepared pan.
- Sprinkle top with nuts and bake cake for 45-50 mins, until cooked when tested with a skewer.
- Cool in pan for 5 mins before removing to a wire rack to cool completely. Dust with powdered sugar and serve warm with custard.
