Ingredients

  • 1/2 cup self-raising flour, sifted
  • 3/4 cup sugar
  • 3/4 cup cream
  • 2 None medium eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1 None pear, peeled, cored, chopped
  • 1 None apple, peeled, cored, chopped
  • 1 1/4 cups chopped mixed nuts (pecans, macadamias, almonds)
  • None None powdered sugar, custard, to serve

Instructions

  1. Preheat the oven to 350°F. Lightly grease and flour a 9 inch springform pan. Line base and sides with baking paper.
  2. Combine flour and sugar in a large bowl. Lightly fold cream, eggs and vanilla into dry ingredients with a wooden spoon until combined. Stir fruit through and pour into prepared pan.
  3. Sprinkle top with nuts and bake cake for 45-50 mins, until cooked when tested with a skewer.
  4. Cool in pan for 5 mins before removing to a wire rack to cool completely. Dust with powdered sugar and serve warm with custard.
